Salt & Pepper / Mala King Prawns
Ingredients
300g x peeled, deveined King prawns
60g Cornflour
120g Rice flour
Salt and pepper
½ Red pepper (thinly sliced)
½ Red onion (thinly sliced)
2 tbsp Chopped coriander
2 spring onions (sliced)
3 tbsp Vegetable oil
2 Garlic cloves (sliced)
2 tbsp Hawker Dan Salt and Pepper Seasoning / Sichuan Mala Spice Mix
Oil for shallow frying
Method
1. Prepare your prawns by peeling , deveining and lightly scoring one side.
2. Mix the cornflour and rice flour together and season with salt and pepper. Evenly coat your prepared prawns in the flour mix
3. Heat your oil to 180/190 for shallow frying, then dust off excess flour from your prawns and shallow fry until golden and crispy (3-4 minutes). Remove the prawns and drain on kitchen paper.
4. In a frying pan or wok, heat up your vegetable oil on a high heat. Add the garlic, pepper and onion and sauté for 1 minute until you start to get a nice, charred colour.
5. Add in the cooked prawns and season with Hawker Dan Salt and Pepper seasoning, saute for 1 more minute continuously stirring.
6. Remove from the heat and add your coriander and spring onions, stir and serve!
