I am a British chef from Birmingham with my heritage being a mix of English, Irish and Cantonese. I have worked around the world in countries such as Singapore, Thailand, France, New Zealand, Greece and more. My heritage combined with my passion and love for travel has enabled me to gain experience and techniques from all different cultures and cuisine to create a unique approach to my cuisine. Taking inspiration not just from the dishes I have discovered on my travels, but the history and reasons why the dishes are created.

I believe food is a universal language which everyone can relate to. Along with fine dining and tasting menus I want to create an accessible food culture for all.

Speaking with clients over their preferences, Dan can design a personalised menu in line with his style of cooking to create a unique dining experience, combining Western and South East Asian flavours.

All menus are designed with the aim to use as much local produce where possible and the highest quality ingredients.
